Vegan Dan Dan Noodles

These noodles are savoury and spicy. You will need some niche oriental ingredients but that shouldn’t be a problem if you like Chinese food.

STEP 1

Wash then blitz the mushrooms in a food processor until they become little chunks. If you don’t have a food processor then just chop finely. Place them in a pan, and then fry until all the mushroom liquid evaporates, and become golden brown. Transfer the mushrooms to a bowl.

STEP 2

All the while, make the sauce. Combine soy sauce, vinegar, tahini, sugar, chili oil (and flakes), broad bean chili paste in a bowl. Your sauce has been made.

STEP 3

Now place a large frying pan or wok over a high heat. Add the veg you fancy, plus fried mushrooms, and garlic. Cook for about a minute. Then add the Shaoxing wine and stir. Fry off for a bit then add the sauce

STEP 4

Cook the noodles, check packaging for time, but probably about 4 minutes

STEP 5

Put noodles in a bowl and put your sauce on top! Add some coriander and spring onions to garnish.
