Best vegan chocolate cake recipe
200g (7 oz) caster sugar
4 tablespoons cocoa powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
5 tablespoons vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
250ml (8 fl oz) water
200g (7 oz) plain flour
What to do
Grease a small loaf/round cake tin.
Sieve together the flour, sugar, cocoa, bicarbonate of soda and salt. Add the oil, vanilla, vinegar and water.
Mix together for several minutes until the texture is really smooth.
Pour into the baking tin and bake, initially for around 40 minutes, although it may need an extra 5 minutes cooking time after that.
Remove from the oven and check that is cooked all the way through.
Leave it to cool, then add the glaze (icing sugar mixed with water).
